This salad is everything. I’ve had it for lunch three times this week and I just can’t get enough. Its turning into a problem I think. I even considered it for breakfast yesterday morning… in my opinion you couldn’t start of the day better! Or get through the day better or end the day better… yes its a problem. But at least its a salad one!
The combo of ingredients is delicious and tastes so.darn.good. The broccoli really soaks up the souther-style dressing, the bacon gives a smokiness, the cheddar a ‘tang’ and the almonds a crunch. This salad has even been a hit with my boyfriend… yes a boy!!! A boy has actually asked me to continue to feed him salad. As a meal. Sans steak. Are you cereal!?
This salad recipe is therefore a keeper (like the boyfriend) and its particularly great as you can make it in a big batch which lasts a few days, as long as you cover and refrigerate (just keep the almonds separate). Also if you are veggie or don’t agree with processed meats, switch the bacon for some avocado which also tastes wunderbar. And as ever, this recipe is low sugar!!! So go and convince some boys that eating low sugar does not mean cardboard topped with spinach. Enjoy!
Ingredients Serves 4-5
- 100g full-fat mayonnaise
- 50g full-fat yoghurt
- 2 tbsp apple cider vinegar
- 2 tbsp lemon juice
- 1/4 tsp of salt and pepper
- 1 medium head of broccoli, cut into small florets
- 150g extra mature cheddar, grated
- 1 small red onion, finely chopped
- 6 slices streaky bacon
- 100g almonds, cut in half
- 100g full-fat mayonnaise
- 50g full-fat yoghurt
- 2 tbsp apple cider vinegar
- 2 tbsp lemon juice
- 1/4 tsp of salt and pepper
Method
- Make the dressing by combining the mayo, yoghurt, vinegar, lemon juice, salt and pepper in a bowl. Whisk until smooth
- Fry up the bacon until hard and crispy (i.e. delicious). Set aside to cool and then crumble into small pieces
- In a large bowl, combine the broccoli, cheddar, bacon and onion
- Add the dressing and toss to coat
- Add the almonds just before serving, add more seasoning if you like things peppery like me
