I love avocados and I love pistachios. They are both packed full of healthy fats and essential nutrients, and combine beautifully in a lassi. What is a lassi you ask? Well its delicious, obviously, but also a yoghurt-based drink deriving from India and Pakistan. Lassis are refreshing and creamy, with the addition of cardamom seeds which adds fragrance and sweetness.
Lassis are brilliant any time of day, although they are particularly great as a post-gym refresher as they are as cooling as a cucumber! They are also pretty filling and are great breakfast, particularly as the avocado really thickens the lassi up… think of a it as a milkshake with a lot less sugar, more flavour and more satisfying! Typically lassis can involve a lot of sugar; however by using avocado rather than higher fructose fruit and replacing added sugar with a small amount of brown rice syrup, the fructose content is kept low… so go ahead and enjoy this exotic treat!
Ingredients Serves 2
- 1 avocado
- 200g plain yogurt
- 200ml full fat milk
- 2 tbsp brown rice syrup
- 1 tsp lime juice
- 4 cardamom pods, crushed with seeds removed
- 3 tbsp pistachios
Method
- Combine all the ingredients in a blender and process until smooth. You can also use a hand blender.
- Pour into two glasses and serve!
