If you are really missing some chocolate to sink your teeth into, try this. It has the nuttiness and creaminess of white chocolate, but is SO much better for your insides (and your conscience!). You could pretty much switch between any other nuts if you are not a fan of Brazils – I have tried this recipe with hazelnuts before and it is just as tasty!
Ingredients
400g brazil nuts
100g coconut oil
4 tablespoons brown rice syrup
70g coconut flakes
Small handful of cacoa nibs (optional)
- Blend the brazil nuts in a food processor for about 10 minutes until a smooth and liquid paste is formed
- Melt the coconut oil, and mix in the nut paste, brown rice syrup and coconut flakes
- Line a baking tray with parchment paper and pour on the mixture (it should be pretty thin, less than 1cm thick)
- Sprinkle the mixture with cacoa nibs
- Set in the freezer for 20 minutes then break up into slabs
Amazing idea! White chocolate is such a nutritional zero that I nearly skipped by this post – so glad I noticed the quotation marks! Is that coconut butter (made from ground coconut meat) or coconut oil (just the oil) you use? I bought the butter once thinking I was buying the oil and they are completely different!

COMPLETELY agrre with the white chocolate comment – did you know there isn’t even cocoa within it, how can it even be labelled chocolate?! PS No sugar or other sweetener at all? I might be tempted to throw in some stevia… But it looks like you’ve given up on sweets entirely. Way to go!
And feel free to throw in some stevia, that will work. I have actually edited the recipe now to add in some brown rice syrup (fructose free sugar syrup) as I made a batch of this earlier with it in and it tasted GREAT! 🙂
Quick question – your ingredients list says coconut oil and your method says coconut butter.
So – which is it really? Or are they one and the same?
