This.stuff.is.dreamy. Think inside of a Bounty bar and you’ve got it. Plus its naturally very sweet but has neglibigble Fructose, huzzah!!! Coconut really is your friend and has a ridiculous number of health benefits (I will do a post on this…). This butter is great to add to porridge, spread on toast, or simple pop from an ice cube tray for a take on a chocolate truffle. So when those sugar cravings hit, head for this.
Did I mention that it sounds fancy but is the simplest thing to make?
1 pack of desiccated coconut (unsweetened)
- Empty your packet of coconut into a food processor and switch on
- After 5 minutes, scrape down the sides
- Repeat and be patient until the coconut takes on liquid form (this may take 15 minutes)
- Place into a jar or ice cube tray for individual portions
