Breakfast Series: Bircher Muesli

This hugely healthy Skandi-style breakfast is everything you need in the morning: quick, tasty, wholesome and filling. You can chuck it together at home or take it in a Tupperware to work – whatever suits your needs. Its pretty perfect and my favourite go-to brekkie.

The typical bircher muesli from lunch outlets and supermarkets are crammed with sugar. They are sweetened with fried fruit, agave, honey, flavoured yoghurt etc. which simply isn’t needed. This recipe won’t give you a sugar crash mid-morning and the coconut water, blueberries and creamy Greek yoghurt make a delicious combination.

Note that if you want to transport this baby to work, then halve the quantity of ingredients and make the mixture in a mason jar or Tupperware. Then add the toppings in the morning and you are off!

Ingredients (Serves 2)

100g whole oats (not milled!)

1 grated apple

½ tsp cinnamon (optional)

150ml coconut water

1 tablespoon cashew nut butter (optional)

2 tablespoons full-fat greek yogurt (per serving)

10ish blueberries (per serving)

Sprinkle of coconut flakes

Sprinkle of nuts (any! I love slivered almonds and cashews)

Method

  1. Start the night before by combining the oats, apple, coconut water, cinnamon (if using) and nut butter (if using) in a bowl. Cover with cling film and place in the fridge overnight.
  2. In the morning, give the mixture a stir and serve it up with a dollop of yoghurt, blueberries, coconut flakes… any topping you fancy!
